Wow, I'm thinking mash potato mullet!

Wow, I have been a little distracted lately.  Could it be the renovation and all those thousands of design decisions,  a little bit of traveling, boys, work, working in the garden, packing up our house, making yummy food like the basil caesar salad with lemon chicken, homemade croutons,  cherry tomatoes, and sweet corn that was so crazy sweet that I didn't have to, need to,put a darn thing, ON IT WAS SO GOOD!
See, I am digressing just a wee bit.  Anyway, today these great FACE PLATES came back in, which would make HEALTHY FOOD FOR THE WEE ONES all the more fun!  What is even more fun, is that they came out with a GIRL FACE Plate.  NO, my boys did not eat Basil Caesar Salad, but they did have the lemon chicken/cheese quesadilla, a bowl of sweet corn, cut off the cob( they will eat more), and strawberries.  While we are on the subject of food, you may or may not know that I am a little bit of a FOODIE  and can be a little FREAKIE, and have come to the conclusion, that in order to eat what I would like to eat, I have to make it. I have been cooking up a storm.   Also, my garden and all summer vegetables are inspiring.   Here is where I was going- a simple recipe that your kids will think are kin to the fast food crap, and you can feel somewhat at ease about it, knowing they are only distantly related.

"FRIED" Chicken Fingers

A couple of boneless, skinless chicken breast, cut in vertical stripes, which means shorter and wider, and less likely to dry out, but do whatever... Just be consistent, so that it is done at the same time.  O.K. I am done. A couple means two.  Now I am just amusing myself. Sorry- Moving on. Did I mention Organic Chicken though- Sort of the whole point here.  Seriously. Seriously.

In a shallow bowl, mix some cayenne, salt (kosher), freshly ground pepper, and Panko crumbs.  Just go easy on the cayenne until you figure it out.  Don't be skimpy on salt or pepper for that matter. Eyeball the Panko crumbs- think two breasts, you can always add more.

In another bowl, melt half a stick of butter.  If you need to be literal- unsalted butter.  Just promise me you will never ever buy margarine / butter crap crock again.  Real Butter Forever! Promise? Good.

O.K., dredge your chicken in the butter, then dredge it in the Panko crumbs and pat some until nice and covered.  Put on a baking sheet.  Keep Dredging.  What a great word- "dredging" you know exactly what I am talking about, don't you.

Bake at 450 degrees and EYEBALL it.  Don't FLIP -just EYEBALL until done, about twenty minutes... Enjoy. Serve with two vegetables and don't go buy those pre-made mashed potatoes- make it! Don't fake it! AND lastly some fruit- Real fruit, not fruit cocktail. Let's keep that an adult beverage please. See- a tad freakie, and I am O.K. with that.

Summer Love




Hey Guys, I apologize for not posting in a while. I thought, with it being Summer, things would slow down a bit, but not the case. I am busy with the store, the boys, and we started renovating our house last week. We are putting in a staircase and moving on up, so I am basically running around like a chicken with my head cut off. Crazy. Anyway, first I wanted to tell you that I have a new blog address for the store. This one just makes a little more sense for moving forward in the world wide web!
